More challenging: watch for eggs, dairy and lard in breads and sauces. Choose vegetable-based stir-fries, tofu and plain noodles and confirm no animal broth is used.

There are halal restaurants in Henan regions and some Muslim-owned noodle shops; look for the green halal sign (清真). In smaller eateries, request beef or vegetarian dishes and confirm cooking methods.

Allergen awareness is lower in many small restaurants—carry a translation card listing allergens in Chinese and mention '我对X过敏' (Wǒ duì X guòmǐn) to avoid cross-contamination.
